I've been reading a lot, and I saw that many recommend not run the script on only 1 server.

I wonder why? And if there is any way to start the project with only 1 server, and add more servers as the site grows.

Because sooner or later you'll get performance problems on that server.
You'll get them sooner if that server will have only 1 HDD. And later if you'll get 2 HDD server and system will be installed on 1st HDD, files will be downloaded from 2nd HDD>
